Το τοπίο της περιοχής μελέτης διαμορφώνεται από ένα σύνολο χαρακτηριστικών στοιχείων, που είναι κυρίως αποτέλεσμα των φυσικών παραγόντων και λιγότερο της ανθρώπινης παρουσίας και χρήσης της γης (αγροτικό τοπίο - οικισμοί). Με την επίδραση των παραγόντων αυτών (χλωρίδα, κλίμα, ορογραφική διαμόρφωση, γεωλογική σύνθεση και ιστορία) διαμορφώνονται στον Ελλαδικό χώρο πέντε κυρίως ζώνες βλάστησης, που διακρίνονται χλωριδικά, οικολογικά, φυσιογνωμικά και ιστορικά. 1 frasco de alcachofas de calidad (prohibido escatimar)
1 pedazo de queso fresco de cabra
2 rebanadas de pan de pueblo
1 cucharada de ajo seco molido
Pimentón de la Vera dulce
Vinagre balsámico de frambuesa
Aceite de oliva virgen extra
Sal en escamas
Elaboración:
Escurrir las alcachofas en un colador. Enjuagar y volver a escurrir.
Manchar la plancha (o wok) con aceite de oliva. Calentar a fuego medio, y saltear las alcachofas con ajo seco molido y sal. Remover insistentemente durante unos 10 minutos.
Cortar las rebanadas de pan, tostarlas, colocarlas sobre sendos platos, y regarlas con aceite de oliva virgen extra.
Rallar el queso con un rallador fino.
Una vez salteadas las alcachofas, colocarlas sobre el pan, sin miedo a que se desparramen por el plato. Hacer lo mismo con el queso rallado de cabra.
Regar la tosta con unas gotas de aceite de oliva. Espolvorear pimentón de la Vera dulce.
Dibujar una “X” en el plato con vinagre balsámico de frambuesa.

Ingredienti:
• 1 barattolo di carciofi di qualità (vietato lesinare)
• 1 pezzo di formaggio fresco di capra
• 2 fette di pane casereccio
• 1 cucchiaio di aglio secco tritato
• paprika dolce
• aceto balsamico di lamponi
• olio extra vergine d’oliva
• sale a scaglie
Preparazione:
Scolare i carciofi in un colino. Risciacquare e scolare di nuovo. Ungere la piastra (o wok) con l’olio d’oliva. Riscaldare a fuoco medio, saltare i carciofi con l’aglio secco tritato e il sale. Voltare i carciofi costantemente per 10 minuti.
Tagliare le fette di pane, tostarle, collocarle ognuna sopra un piatto e cospargerle con olio extra vergine d’oliva. Grattugiare il formaggio con una grattugia fine.
Una volta saltati i carciofi, posizionarli sul pane, senza temere che si spargano sul piatto. Fare lo stesso con il formaggio di capra grattugiato. Cospargere il pane tostato con alcune gocce di olio d’oliva. Spolverare con della paprica dolce. Con l’aceto balsamico di lamponi, tracciare una croce sul piatto.
