I am translating a set of documents for a manufacturer of dairy products. This term appears in a table in relation to a cheddar making workshop under the heading “equipment” Cave de refroidissement, avant défûtage”. The term “défuteur” also appears. I think if this were a distillery the translation would be “unkegging” but I am not clear what is correct in this context. I presume it relates to a liquid product (milk or whey).

These barrels of cheddar will have to opened for processing. On the Loos site (above) there is a picture of a 'barrel picker' which appears to be removing the tubular cardboard 'barrel' from the cheese. 'Picker' appears to be jargon for equipment for handling steel drums, etc., i.e. not in the sense of 'select' but in the sense of a 'picker-upper', to be familiar.
I haven't found a description of this operation, which I take to be one where the outer enclosure is withdrawn for re-use rather than being slit open, for example, but it could be something like 'stripping the cheese' (of its packaging/barrel), 'removing the (outer/cardboard) tube' or, since it seems there might be plastic inside the cardboard, simply 'opening barrels'.

Having read that, I feel lucky to have two cheese shops within 15km of home that sell English and Irish farm cheddars, along with Stilton, Irish Crozier blue, Shropshire blue (from time to time). That on top of the little waxed cheddars in Leclerc.
